Deviled Eggs for the Devil You Know

The Goods

Tap each one as you gather it. Changing the servings changes these amounts, not the pan or the times, so keep an eye on it.

• 6 large eggs
• 1/4 cup mayonnaise
• 1 tsp yellow mustard
• 1 tsp pickle juice
• 1/8 tsp fine salt
• 1 pinch paprika

The Method

1. 01

   Cover the eggs with cold water, bring to a boil, then cover, turn off the heat and let sit 11 minutes. Chill in ice water and peel.

   Halve the eggs and pop the yolks into a bowl.

3. 03

   Mash the yolks with the mayonnaise, mustard, pickle juice and salt.

4. 04

   Fill the whites and dust with paprika. Keep cold.
